Zucchini Bread

Ingredients

  • 1 1/2 cup whole wheat flour
  • 1 scoop BiPro RENEW Vanilla
  • 1 tsp. baking soda
  • 1/2 tsp. salt
  • 1 tsp. ground cinnamon
  • 1/3 c. butter, melted
  • 1/2 c. unsweetened vanilla almond milk
  • 1/2 c. maple syrup
  • 2 large eggs
  • 1 tsp. vanilla extract
  • 1 c. grated zucchini (patted dry with paper towel)

Directions

1. Preheat oven to 350°F, and lightly grease a 9x5 loaf pan
2. In a large bowl whisk together the wheat flour, BiPro RENEW, baking soda, salt and cinnamon
3. In a separate bowl combine the maple syrup, butter, eggs, almond milk, vanilla and zucchini
4. Gently stir the dry mixture into the wet mixture until just combined
5. Pour the batter into the prepared loaf pan
6. Bake for 25-35 minutes, or until a toothpick comes out clean
7. Remove from the oven and let completely cool before serving
