Zucchini Apple Bread

Ingredients

  • 3/4 cup whole wheat flour
  • 2 scoops BiPro BOLD Creamy Vanilla
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon pumpkin pie spice
  • 1/2 cup erythritol sweetener
  • 1/4 cup olive oil
  • 2 large eggs
  • 1/4 plain nonfat yogurt
  • 1 teaspoon vanilla extract
  • 1 cup grated zucchini (patted dry with paper towel)
  • 1/2 unsweetened applesauce

Directions

1.    Preheat oven to 350°F, and lightly grease a 9x5 loaf pan
2.    In a large bowl whisk together the wheat flour, biPro, baking powder, baking soda, salt, and spices
3.    In a separate bowl combine the erythritol, olive oil, eggs, yogurt, vanilla, zucchini, and applesauce
4.    Gently stir the dry mixture into the wet mixture until just combined
5.    Pour the batter into the prepared loaf pan
6.    Bake for 50-55 minutes, or until a toothpick comes out clean
7.    Remove from the oven and let completely cool before serving
