Strawberry Oat Muffins

Ingredients

  • 1 cup Quick Oats
  • 1 cup Skim Milk
  • ¾ cup All Purpose Flour
  • ⅓ cup BiPro Whey Protein Isolate, Unflavored or Vanilla
  • 1½ tsp Baking Powder
  • ½ tsp Cinnamon
  • ½ tsp Salt
  • 1 Egg
  • ¾ cup Brown Sugar
  • ¼ cup Canola Oil
  • 1 tsp Vanilla
  • 1 cup Strawberries, sliced

Directions

  1. Combine oats and milk and let sit 5 minutes.
  2. In a separate bowl, mix together flour, BiPro Whey Protein, baking powder, cinnamon and salt.
  3. Set aside.
  4. In a large bowl, beat together egg, brown sugar, oil and vanilla.
  5. Blend in oat mixture.
  6. Stir in flour mixture until just moistened.
  7. Fold in strawberries.
  8. Divide batter into 12 greased muffin cups.
  9. Bake at 375°F for 15-20 minutes.
