Spinach Salad with Strawberry Poppy Seed Dressing

Ingredients

  • ¼ cup Olive Oil
  • 3 Tbsp Red Wine Vinegar
  • ¼ cup Water
  • ½ cup Strawberries, sliced
  • ¼ cup BiPro unflavored
  • 2 Tbsp Honey
  • 1 Tbsp Dijon Mustard
  • ¼ tsp Salt
  • 2 tsp Poppy seeds
  • 10 ounces Baby spinach
  • ½ cup Pecans, chopped
  • 2 cups Strawberries, sliced
  • 1 cup Raspberries
  • 4 ounces Feta cheese, crumbled

Directions

  1. Using a blender, puree olive oil, red wine vinegar, water, ½ cup strawberries, BiPro Strawberry, honey, Dijon mustard and salt until smooth. Stir in poppy seeds.
  2. Toss together spinach, nuts, berries and feta. Divide onto 8 salad plates. Top each plate with 2-3 Tbsp of dressing.
