Rhubarb Muffins

Ingredients

  • 1 cup All Purpose Flour
  • ⅓ cup BiPro Whey Protein, natural Unflavored
  • ¾ cup Sugar
  • 2 tsp Baking Powder
  • 1 tsp Cinnamon
  • ½ tsp Salt
  • 1¼ cup Skim Milk
  • 1 Egg
  • ¼ cup Canola Oil
  • 1 cup Rhubarb, finely chopped

Directions

1. Mix together flour, BiPro, sugar, baking powder, cinnamon and salt.
2. Set aside.
3. Combine milk, egg and oil.
4. Mix together well.
5. Add to dry ingredients and stir together until just moistened.
6. Stir in rhubarb.
7. Divide batter into 12 greased muffin cups.
8. Bake at 350°F for 23 minutes.
