Quiche Cups - Bariatric Friendly

Ingredients

  • 4 Eggs
  • 1 cup Plain nonfat Greek yogurt
  • ½ cup Fat free ricotta or cottage cheese
  • ¼ cup Unflavored BiPro Whey Protein Isolate
  • 1 cup Lowfat shredded cheddar cheese
  • Up to 1 cup Add-ins (see below)
  • ½-1 tsp Seasonings

Directions

  1. Combine eggs, Greek yogurt, ricotta cheese and BiPro Unflavored until well blended.
  2. Stir in shredded cheese, add-ins and seasonings.
  3. Divide into 12 well-greased or paper lined muffin cups and bake at 375°F for 20-25 minutes, or until center is set.
  4. Refrigerate or freeze left over portions.

Add-ins
Meats: diced ham, chopped cooked chicken, shrimp or crabmeat, tuna
Raw or lightly sautéed vegetables: sliced mushrooms, diced onions, diced red or green peppers, fresh chopped spinach

Seasonings:
Garlic powder, onion powder, dried or fresh herbs
