Purple Mashed Potatoes with Roasted Garlic

  • 1 head Garlic
  • 1 tsp Olive oil
  • 1½-2 pounds Purple potatoes (peel if desired), cut into chunks if large
  • 1 scoop BiPro Unflavored Whey Protein Powder
  • ½ cup Skim milk
  • 3 Tbsp Butter
  • Salt and pepper to taste


  1. Roast garlic: Slice off top of garlic head, drizzle with olive oil and wrap in foil. Place on a baking sheet and bake at 425°F for 35 minutes. Remove from oven and let cool briefly.
  2. In the meantime, place potatoes in a large pot and cover with cold water. Bring to a boil and cook until fork tender, about 12-15 minutes. Drain.
  3. Whisk BiPro into milk. Add with butter and roasted garlic to pot with potatoes and mash to desired consistency. Add salt and pepper to taste.
  4. Serve immediately.
