Pumpkin Vanilla Protein Muffin Tops

Ingredients

  • MUFFIN TOPS
  • 1 1/4 cup pumpkin puree
  • 1 cup nonfat Greek yogurt
  • 2 tsp vanilla extract
  • 4 large egg whites
  • 2 scoops BiPro BOLD creamy vanilla
  • 1 1/3 cup oat flour (grinded)
  • 1/2 cup wheat flour
  • 1 tsp pumpkin pie spice
  • 1 tsp cinnamon
  • 1 tsp baking soda
  • GLAZE:
  • 1/2 cup vanilla Greek yogurt
  • 1 tablespoon BiPro BOLD Creamy Vanilla
  • 1 tablespoon maple syrup
  • 1 tablespoon water
  • 1 tablespoon melted cream cheese
  • 1 tsp vanilla extract

Directions

Directions:

1. Preheat oven to 350°F

2. Combine BiPro, oat flour, wheat flour, baking soda, and spices.

3. In a separate bowl mix together pumpkin puree, yogurt, egg whites, and vanilla extract.

4. Stir flour mixture into the pumpkin mixture until just combined.

5. Scoop batter, about a 1/4 cup, and place 2 inches apart on a greased cookie sheet.

6. Bake for 18-20 minutes**Makes approximately 15 servings

7. While the muffin tops are baking, prepare the glaze by whisking all ingredients together.

8. When muffin tops are completely cool top each with 1 T of glaze
