Pumpkin Protein Muffins

Ingredients

  • 1 cup Whole Wheat Flour
  • ½ cup BiPro BOLD Boldly Bare
  • ½ cup Zero-calorie sweetener of choice
  • 2 tsp Baking Powder
  • 1 tsp Cinnamon
  • 1 tsp Nutmeg
  • ¾ tsp Salt
  • 1 cup Applesauce, unsweetened
  • 1 cup Pumpkin, canned
  • ¼ cup Water
  • 2 Eggs
  • ¼ cup Vegetable Oil
  • ½ cup Walnuts, chopped

Directions

  1. Mix together whole wheat flour, BiPro BOLD, sweetener, baking powder, cinnamon, nutmeg, and salt. Set aside.
  2. Combine pumpkin, applesauce, water, eggs, and oil. Mix together well.
  3. Add to dry ingredients and stir together. Stir in walnuts.
  4. Divide batter into 12 greased muffin cups. 
  5. Bake at 350°F for 22 minutes
