Pumpkin Pound Cake (Low Carb)

Ingredients

  • 1 cup Almond Flour
  • ½ cup Unflavored BiPro Whey Protein
  • ½ cup All Purpose Flour
  • 1 tsp Baking Powder
  • ½ tsp Cinnamon
  • ¼ tsp Nutmeg
  • ¼ tsp Ginger
  • ¼ tsp Cloves
  • 1 cup Pumpkin, canned
  • 1 cup Zero-calorie sweetener of choice
  • 1 tsp Vanilla
  • 5 Eggs
  • ¼ cup Vegetable Oil

Directions

  1. Mix together almond flour, BiPro Whey Protein, all purpose flour, baking powder, cinnamon, nutmeg, ginger and cloves. Set aside.
  2. Combine pumpkin and sweetener. Add vanilla, eggs and oil. Mix together well.
  3. Add dry ingredients and stir together.
  4. Pour batter into greased loaf pan (8½” x 4½”).
  5.  Bake at 300°F for 1 hour. Let cool 10 minutes in pan before removing.
  6. Cool on wire rack until completely cooled.
