Pumpkin Pie

Ingredients

  • 1 Rolled or pre-formed pie crust
  • 15 oz Pumpkin puree
  • 12 fl oz Evaporated milk
  • ½ cup BiPro Whey Protein Powder, unflavored
  • 2 Eggs
  • ½ cup Sugar
  • 2 tsp Pumpkin pie spice
  • ¼ tsp Salt

Directions

  1. Preheat oven to 425°F. Press rolled pie crust into 9 inch pie pan.
  2. Beat two eggs and add pumpkin pie filling. Slowly pour in milk.
  3. Combine remaining ingredients until uniform and smooth.
  4. Fill pie shell.
  5. Bake for 15 minutes at 425°F.
  6. Reduce heat to 350°F and continue baking for 50 minutes (or until toothpick comes out clean).

Protein Bonus:

  1. Combine 1 cup whipping cream and 1 tsp vanilla.
  2. Mix on high speed with wire whisk.
  3.  As soft peaks start to form, dust in ¼ cup BiPro and up to 2 Tbsp of powdered sugar.
  4. Continue mixing until semi-stiff peaks start to form.
