Flourless Pumpkin Muffins (Gluten-Free)

Ingredients

  • ¼ cup Almond butter*
  • ¾ cup Pumpkin puree
  • 1 Egg
  • ¼ cup Honey
  • 1 tsp Vanilla
  • ½ cup Quick oats
  • 1 scoop BiPro Whey Protein, French Vanilla or Unflavored
  • 2 Tbsp Ground flaxseed
  • 2 tsp Pumpkin pie spice
  • ½ tsp Baking soda
  • ¼ cup + 1 Tbsp Miniature chocolate chips

Directions

  1. Preheat oven to 375°F.
  2. Apply cooking spray to 9 cavities of a muffin tin. Set aside.
  3. Combine almond butter, pumpkin puree, egg, honey and vanilla until smooth.
  4. Add oats, BiPro, flaxseed, pumpkin pie spice and baking soda. Mix until well combined.
  5. Stir in ¼ cup miniature chocolate chips.
  6. Divide batter into prepared muffin tin. Sprinkle 1 Tbsp miniature chocolate chips over muffin tops.
  7. Bake for 12 minutes or until muffins are set and a toothpick comes out clean.
  8. Let muffins cool 10 minutes before removing from pan.

*Other nut/seed butters can also be used.
