Pumpkin Curry Soup

Ingredients

  • 2 Tbsp butter
  • 3 Tbsp flour
  • 1 Tbsp curry powder
  • 4 cups vegetable broth
  • 1 – 29 oz. can pumpkin
  • 1 Tbsp soy sauce
  • 1 Tbsp sugar
  • 1½ cups half & half cream
  • ¾ cup BiPro Whey Protein Powder, Unflavored

Directions

  1. Melt butter in a large saucepan over medium heat.
  2. Stir in flour and curry powder and cook while stirring until mixture begins to bubble.
  3. Gradually whisk in broth and cook until thickened.
  4. Stir in pumpkin, soy sauce and sugar.
  5. Whisk together half & half and BiPro. Stir into soup and heat with gentle stirring until hot. Try to keep soup temperature below 160°F
