Protein Packed Chicken Parmesan Florentine Meatballs

Ingredients

  • 1 lb ground turkey or chicken
  • 3/4 cup rolled oats, roughly ground
  • 1/4 cup unflavored BiPro Bold
  • 2 tbsp yellow onion, minced
  • 1 1/2 cups fresh spinach, chopped
  • 1 tbsp Worcestershire
  • 2 tsp Italian seasoning
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1/2 cup grated parmesan
  • 1/2 cup shredded mozzarella
  • 2 cloves minced garlic
  • 1/4 cup marinara sauce (+more for serving)

Directions

1.    Preheat oven to 400F, line baking sheet with foil
2.    Mix all ingredients until protein powder and oats are thoroughly incorporated
3.    roll into 1in round meatballs (approx 30)
4.    Spray pan with cooking spray
5.    space meatballs about 1in apart and mist with oil
6.    bake for 15-20min
7.    Serve with marinara sauce for dipping
