Protein Crepes

Ingredients
- 1 cup of all-purpose flour
- 2 scoops unflavored BiPro
- 1 ½ cups of low-fat milk
- 2 eggs
- 1 t olive oil
- Nonstick spray
Directions
- In a blender combine flour, BiPro, milk, eggs and olive oil. Blend until smooth
- Heat a nonstick frying pan on medium.
- Spray pan with nonstick cooking spray and pour ¼ cup batter into pan. Immediately lift the pan and swirl batter in a circular motion until a thin layer coats the bottom.
- Cook for 1 minute or until bottom of crepe is a light golden brown.
- Using a rubber spatula, gently release sides of crepe from the pan and flip. Cook for another 30 seconds.
- Fill crepes with desired toppings in the center and roll. Best if served warm.
