Chocolate Truffle Eyeballs

Ingredients

  • 8 ounces Neufchâtel Cheese (light cream cheese), softened
  • 1 package (15.25 oz) Chocolate Sandwich Cookies, crushed
  • 2/3 cup BiPro Whey Protein Isolate, Unflavored
  • 12 ounces White Chocolate Chips or White Coating

Directions

  1. Mix cream cheese, crushed cookies and BiPro until well blended.
  2. Shape into 40 – 1 inch balls and refrigerate for 30 minutes.
  3. Melt white chocolate or coating and dip balls into melted chocolate. Place on wax paper lined pans and top with a brown, green or blue M&M.
  4. Place in freezer for several minutes to harden coating. Decorate with red writing gel or edible markers.
