Lentil Veggie Loaf

Ingredients

  • ¼ cup BiPro Whey Protein Isolate, Unflavored
  • 2 Tbsp Olive oil
  • ⅓ cup water
  • 1 – 15 oz. can lentils, drained
  • ½ cup red onion, chopped
  • 2 cups baby spinach, chopped
  • ⅓ cup roasted red pepper, jarred, cut into ½ inch pieces
  • 2 cloves garlic, chopped
  • 2 oz. feta cheese, crumbled
  • 1 – 6 oz. pkg falafel mix*
  • ⅓ cup BiPro Whey Protein Isolate, Unflavored

Directions

Preheat oven to 375°F. Line rimmed baking sheet with foil.

  1. Combine eggs, oil and water. Add lentils, onion, spinach, roasted red pepper and garlic. Mix well.
  2. Fold in feta cheese.
  3. In a small bowl, combine falafel mix and BiPro. Add to bowl with other ingredients and mix well.
  4. Transfer to baking sheet and shape into a loaf about 9 × 4 inches.
  5. Bake at 375°F for 30 minutes.
