Gluten-Free Blueberry Muffins

Ingredients

  • 1 cup Brown Rice Flour
  • ½ cup Potato Starch
  • ½ cup Tapioca Flour
  • ⅓ cup + 1 Tbsp Sugar
  • ¼ cup BiPro Whey Protein Isolate, Unflavored
  • 2½ tsp Baking Powder
  • ¾ tsp Salt
  • ¾ cup Skim Milk
  • ½ cup Canola Oil
  • 2 Eggs
  • ½ tsp Vanilla
  • 1½ cups Blueberries

Directions

  1. Line muffin tins with paper.
  2. Preheat oven to 400°F.
  3. Stir together dry ingredients.
  4. Make a well in center of mixture and add milk, oil, eggs and vanilla.
  5. Stir together just until ingredients are moistened.
  6. Gently fold in blueberries.
  7. Divide mixture into muffin tins.
  8. Bake for 25 minutes.
