Gluten Free Banana Bread

Ingredients

  • 1/4 cup coconut oil, melted
  • 3 bananas, mashed (about 1 1/2 cups)
  • 1 1/2 cup gluten-free all-purpose flour
  • 1/2 cup almond flour
  • 2 scoops BiPro BOLD, Creamy Vanilla
  • 2 tsp. baking powder
  • 1 tsp. ground cinnamon
  • 1/2 tsp salt
  • 1/2 tsp baking soda
  • 1/4 tsp. ground nutmeg
  • 1/2 cup coconut sugar
  • 2 large eggs, room temperature
  • 1/2 cup nonfat Greek yogurt (plain or vanilla)
  • 1 tsp. vanilla extract

Directions

1. Preheat oven to 375F, grease 9x5 loaf pan
2. Mix all dry ingredients together: GF flour, almond flour, BiPro BOLD, baking powder, cinnamon, baking soda, salt and nutmeg
3. Whisk together wet ingredients: mashed bananas, eggs, coconut sugar, yogurt, vanilla extract and melted coconut oil.
4. Add dry ingredients to wet batter and stir until well incorporated
5. Bake for 50 minutes or until toothpick comes out clean. Cool in pan for 10 minutes, then transfer to wire rack to cool completely. Slice into 10 servings.
