Gluten-Free Banana Bread

Ingredients

  • ½ cup Butter
  • ¾ cup Sugar
  • 2 Eggs
  • 1 tsp Vanilla
  • 3 bananas, large, mashed
  • 2 cups Rice Flour
  • ¼ cup Unflavored BiPro Whey Protein
  • 2 tsp Baking Powder
  • ½ cup Pecans, chopped

Directions

  1.  Preheat oven to 325°F.
  2. In a large bowl, cream butter and sugar.
  3. Beat in eggs, vanilla and bananas.
  4. Stir in rice flour, BiPro and baking powder until moistened.
  5. Stir in pecans.
  6. Pour into a greased 5 × 9 inch loaf pan.
  7. Bake for 1 hour and 20 minutes.
  8. Let cool 10 minutes before removing from pan.
