Eggnog Muffins

Ingredients

  • 1¾ cups All-purpose flour
  • ⅓ cup BiPro Whey Protein Powder, French Vanilla or Unflavored
  • ⅓ cup BiPro French Vanilla or Unflavored
  • 2 tsp Baking powder
  • ½ tsp Nutmeg
  • 2 Eggs
  • 1 cup Eggnog
  • ½ cup Butter, melted and cooled
  • 1 tsp Vanilla Extract

Directions

  1. Preheat oven to 375°F.
  2. Stir together flour, BiPro, sugar, baking powder and nutmeg; set aside.
  3. In another bowl, combine eggs, eggnog, butter and vanilla extract. Add dry ingredients and stir until just moistened.
  4. Spoon batter evenly into 12 greased or paper lined muffin tins.
  5. Bake at 375°F for 15 minutes. Cool 5 minutes before removing from pan.
