Corn Potato Chowder

Ingredients

  • 2½ cups corn, frozen or canned (drained)
  • 2 cups potatoes, diced
  • 1 Tbsp butter
  • ¼ cup onion, chopped
  • ¼ cup green pepper, chopped
  • ¼ cup celery, chopped
  • ½ tsp salt
  • ¼ tsp black pepper
  • 1½ cups water
  • 1 cup Skim Milk or Milk Alternative
  • 1 Tbsp flour, mixed with 1 Tbsp water
  • ½ cup BiPro Whey Protein Isolate, Unflavored
  • 1 cup Skim Milk or Milk Alternative

Directions

  1. Combine corn, potatoes, butter, onion, green pepper, celery, salt, pepper and 1½ cups water. Cook over medium heat until potatoes are tender.
  2. Add 1 cup milk and flour/water mixture. Bring to a boil and cook 10 minutes.
  3. Whisk together BiPro and remaining 1 cup milk. Stir into soup and heat with gentle stirring until hot. Try to keep soup temperature below 160°F.
