Coconut Dream Protein Cookies

Ingredients

  • 1 1/2 cups unsweetened shredded coconut flakes
  • 1/2 cup sunflower seeds
  • 2 scoops Vanilla BiPro RENEW
  • 1/4 cup honey
  • 1 tsp vanilla extract
  • 1 tsp cinnamon
  • 1/4 cup coconut oil (melted)
  • 2 tbsp water

Directions

1.    Preheat oven to 300 degrees.
2.    Roughly chop sunflower seeds in a blender or processor until broken up into smaller chunks.
3.    Place all ingredients into a bowl and stir together. If the batter appears too crumbly, add more water until desired cookie texture is reached.
4.    Scoop cookies onto a cookie tray. [makes about 14]
5.    Gently press the cookies down to flatten.
6.    Bake for about 15 minutes.
