Cocoa Banana Muffins

Ingredients

  • 1/2 cup unsweetened almond milk
  • 1 cup mashed, ripe banana ( 2.5 bananas)
  • 2 T flax seed meal
  • 1 1/2 cups oat flour
  • 2 scoops BiPro BOLD Chocolate Milkshake
  • 2 cups fresh, raw spinach
  • 1 T oil (we used coconut)
  • 1/4 tsp salt
  • 1/4 cup unsweetened cocoa powder
  • 1/2 cup chocolate chips
  • 2 T baking powder
  • 1 tsp baking soda
  • 2 tsp vanilla extract

Directions

1.    Preheat oven to 350 degrees.
2.    In a food processor, puree the spinach until a smooth paste is reached. Add all of the wet ingredients [banana, milk, vanilla, oil]. Mix until combined.
3.    Transfer the wet mixture to a large bowl. Add all of the dry ingredients [except chocolate chips].
4.    Stir until just mixed. Then fold in the chocolate chips.
5.    Place batter in greased/lined muffin tins.
6.    Bake for about 20-23 minutes, or until muffins are set on top and a toothpick comes out clean.
7.    Allow to cool and store in an airtight container. Will last about a week [if stored in the fridge].
