Chocolate Muffins

Ingredients

  • 1 cup Plain Greek yogurt
  • ½ cup Skim milk
  • 2 Eggs
  • 1/3 cup Canola oil
  • 1 tsp Vanilla
  • 1 Cup All-Purpose flour
  • 1 scoop BiPro Chocolate Whey Protein
  • 1/2 cup cocoa powder
  • 1/2 cup sugar (or equivalent sweetener of choice)
  • 1 tsp baking soda
  • ½ cup Baking chips or chunks (chocolate, white, peanut butter, etc.)

Directions

  1.  Preheat oven to 375°F.
  2. Combine Greek yogurt, milk, eggs, oil and vanilla. Whisk until smooth.
  3. Sift together flour, BiPro Chocolate, cocoa, sugar and baking soda. Add to yogurt mixture and mix well. Stir in baking chips.
  4. Spoon into 12 greased or paper lined muffin tins. Sprinkle with additional baking chips or chopped nuts if desired.
  5. Bake at 375°F for 15 minutes. Cool 10 minutes before removing from pan.
