Chocolate Mint Truffles

  • 32 Chocolate sandwich cookies
  • 8 ounces Fat free cream cheese, softened
  • ¾ cup BiPro BOLD, Chocolate Milkshake
  • ⅛ tsp Mint extract
  • ½ cup Mint chocolate chips
  • Dipping chocolate or chocolate coating


  1. Place cookies in food processor or blender and process until fine crumbs are formed. Place crumbs in large mixing bowl, reserving ½ cup crumbs for later.
  2. Add cream cheese, BiPro BOLD and mint extract to mixing bowl. Mix on low speed until a dough forms. Stir in mint chocolate chips.
  3. Place dough in refrigerator 30-40 minutes. Form into 24 - 1¼ inch balls. Place on waxed paper lined pan and freeze 1hour.
  4. Dip frozen balls into melted chocolate and sprinkle with reserved cookie crumbs before chocolate starts to set. Refrigerate 10 minutes.
  5. Store in covered container in refrigerator or freezer.

Note: Chocolate-mint sandwich cookies can be used for an extra minty treat. Regular or reduced fat cream cheese can also be used but will impact the nutrition facts.
