Zucchini Chocolate Chip Muffins

Ingredients

  • 1½ cups all-purpose flour
  • ½ cup sugar
  • ⅓ cup Unflavored BiPro Whey Protein
  • 1 tsp baking soda
  • ½ tsp salt
  • 1 tsp cinnamon
  • 6 Tbsp canola oil
  • 1 egg
  • ⅓ cup milk
  • 1 tsp vanilla extract
  • 1 Tbsp lemon juice
  • 1 cup zucchini, shredded
  • ⅔ cup chocolate chips

Directions

  1. Combine flour, sugar, BiPro Whey Protein, baking soda, salt and cinnamon in a large bowl.
  2. Mix together oil, egg, milk, vanilla and lemon juice. Add to flour blend and mix until moistened (batter will be very thick).
  3. Fold in zucchini and chocolate chips until evenly incorporated.
  4. Spoon into greased muffin tins and filling two-thirds full.
  5. Bake at 350°F for 18-20 minutes (or until toothpick comes out clean).
