Blueberry Cheesecake Bites

  • 1 1/2 cup plain greek yogurt
  • 12 oz low fat cream cheese
  • 2 eggs
  • 3 Tbsp. Erythritol/xylitol sweetener
  • 1 cup blueberries
  • 10 sheets of low-fat graham crackers, crushed
  • 2 Tbsp. butter, melted
  • 1/2 cup blueberries
  • 3 Tbsp. blueberry preserves


  1. Line an 8x8 pan with parchment paper and preheat the oven to 350°F
  2. Mix together the crushed graham crackers and melted butter and press firmly into the prepared pan. 
  3. Bake for 7 minutes. 
  4. Combine the yogurt, cream cheese, sweetener, and Vanilla renew in a large bowl. Mix until very smooth by hand or with an electric mixer. 
  5. Add eggs one at a time and beat mixture until smooth before adding the next. 
  6. Fold in blueberries and pour onto the crust. 
  7. Bake at 350°F for 40 minutes.
  8. After cheesecake has fully cooled, top with preserves and blueberries.  
  9. Makes 9 servings. Refrigerate in a tightly sealed container.
