Blueberry Cheesecake Bites

Ingredients
- CHEESECAKE
- 1 1/2 cup plain greek yogurt
- 12 oz low fat cream cheese
- 2 eggs
- 3 Tbsp. Erythritol/xylitol sweetener
- 2 scoops BiPro RENEW, Vanilla
- 1 cup blueberries
- CRUST
- 10 sheets of low-fat graham crackers, crushed
- 2 Tbsp. butter, melted
- TOPPING
- 1/2 cup blueberries
Directions
- Line an 8x8 pan with parchment paper and preheat the oven to 350°F
- Mix together the crushed graham crackers and melted butter and press firmly into the prepared pan.
- Bake for 7 minutes.
- Combine the yogurt, cream cheese, sweetener, and Vanilla renew in a large bowl. Mix until very smooth by hand or with an electric mixer.
- Add eggs one at a time and beat mixture until smooth before adding the next.
- Fold in blueberries and pour onto the crust.
- Bake at 350°F for 40 minutes.
- After cheesecake has fully cooled, top with blueberries.
- Makes 9 servings. Refrigerate in a tightly sealed container.
