BLT Chicken Salad

  • 5 slices Bacon, cooked and crumbled
  • 3 cups Chicken Breast, cooked and diced
  • 1 cup Tomato, chopped
  • 2 Celery Stalks, thinly sliced
  • 2 Tbsp Green Onion, chopped
  • 2/3 cup Light Mayonnaise
  • ¼ cup Unflavored BiPro Whey Protein Isolate
  • 2 Tbsp Lemon Juice
  • 1 Tbsp Parsley, chopped
  • 12 Romaine Lettuce Leaves


  1. Combine bacon, chicken, tomato, celery and green onion in a large bowl.
  2. In a small bowl, whisk together mayonnaise, BiPro Whey Protein, lemon juice and parsley until smooth. Pour over chicken mixture and toss gently to coat.
  3. Refrigerate 30 minutes.
  4. To serve, place 2 romaine leaves on a plate. Stir chicken mixture and spoon onto romaine leaves. Garnish with additional chopped tomato and crumbled bacon if desired. (Alternately, romaine leaves can be chopped and stirred into chicken salad immediately before serving.)
