Apple Cinnamon Protein Scones

Ingredients

  • 1 Scoop BiPro BOLD Creamy Vanilla
  • 1/2 c. almond flour
  • 1/2 c. coconut flour
  • 1/4 c calorie-free sweetener divided
  • 2 tsp. baking powder
  • 1 1/4 tsp ground cinnamon divided
  • 1/4 tsp salt
  • 1/2 c egg whites (4 large egg whites)
  • 1/2 c applesauce
  • 2 T softened butter
  • 1 tsp vanilla extract
  • 1 c peeled diced apples
  • MAPLE ICING
  • 1/2 scoop (19.5g) BiPro BOLD Creamy Vanilla
  • 3 T powdered sugar
  • 1-2 T almond milk
  • 1/4 tsp maple extract
  • 1/2 tsp vanilla extract

Directions

1. Preheat oven to 375°F and grease an 8-9in cake pan.
2. Whisk together protein powder, flours, 3T sweetener, baking powder, 1 tsp cinnamon and salt.
3. Add wet ingredients to form a soft dough, then fold in diced apples.
4. Press dough into cake pan about 1" thick.
5. Mix together remaining 1T sweetener and 1/4 tsp of cinnamon and sprinkle on top.
6. Cut into 6 triangles and lay on a lined baking sheet.
7. Bake for 12-18 minutes.
8. Combine icing ingredients while scones are cooling.
9. Once fully cooled, drizzle with icing.
