Cranberry Pear Crisp

Ingredients

  • ----Topping----
  • 1½ cups all-purpose flour
  • 1 cup cold butter, cubed
  • 1 cup quick cooking oats
  • ¾ cup each granulated and light brown sugar
  • ¼ cup BiPro Whey Protein, natural Unflavored
  • 1 tsp ground cinnamon
  • ¼ tsp each nutmeg and salt
  • ¼ tsp orange zest (optional)
  • ----Fruit----
  • 3 lbs Bartlett pears, cored and cubed
  • 1¼ cups fresh cranberries (¾ cup if dried)
  • 1 cup water
  • ¼ cup BiPro Whey Protein, natural Unflavored
  • ¾ cup each granulated and light brown sugar, packed
  • 2 Tbsp all-purpose flour
  • 1 dash cinnamon

Directions

  1.  Preheat oven to 350°F and grease 9 × 13 inch glass baking dish (325°F for dark pan).
  2. Combine fruit section of ingredients in baking dish and hand mix.
  3. In a stand mixer; combine oats, sugars and butter until clumps form and continue to add topping section of ingredients until well mixed and press evenly onto fruit mixture.
  4.  Bake until top surface appears golden brown and dry (filling should be bubbling through).
