Cranberry Cake

Ingredients

  • 2 cups Cranberries, fresh or frozen, chopped
  • ½ cup Walnuts, chopped
  • ½ cup Sugar
  • 2 Eggs
  • ¾ cup Butter, melted
  • ¾ cup + 2 Tbsp All-purpose flour
  • 1 cup Sugar
  • ⅓ cup BiPro Whey Protein, Unflavored
  • ½ tsp Salt
  • 1 tsp Vanilla Extract
  • ¼ tsp Almond Extract
  • 1 tsp Orange Peel

Directions

  1. Spread chopped cranberries and walnuts in bottom of greased 9 inch square pan or 10 inch pie plate. Sprinkle pan with ½ cup sugar.
  2. In a mixing bowl, combine eggs, melted butter, flour, 1 cup sugar, BiPro Whey Protein, salt, extracts and orange peel.
  3. Spread mixture over cranberries and nuts.
  4. Bake at 350°F for 30-40 minutes (or until a toothpick comes out clean).
  5. Serve warm, and if desired, with whipped cream or ice cream.
