Cranberry Orange Muffins

Ingredients

  • 1¾ cup Cake Flour
  • ⅓ cup BiPro Whey Protein, natural Unflavored
  • ½ cup Zero-calorie sweetener of choice
  • 2 tsp Baking Powder
  • ¼ tsp Salt
  • ¾ cup Skim Milk
  • ½ cup Orange Juice
  • 1 Egg
  • ½ cup Vegetable Oil
  • 1 cup Sweetened Dried Cranberries

Directions

  1. Stir together cake flour, BiPro Whey Protein, sweetener, baking powder and salt.
  2. In a separate bowl, combine skim milk, orange juice, egg and oil.
  3. Add to dry ingredients.
  4. Mix until dry ingredients are just moistened.
  5. Add cranberries and stir until combined.
  6. Spoon into greased muffin tins, filling about ⅔-¾ full.
  7. Bake at 400°F for 18-20 minutes.
