Pumpkin Granola

Ingredients

  • 3½ cups Old fashioned oats
  • ¾ cup Coconut
  • 1 cup Sliced almonds*
  • 2/3 cup BiPro, French Vanilla or Unflavored
  • 1½ tsp Cinnamon
  • ¼ tsp Nutmeg
  • ¼ cup Maple syrup
  • 1 cup Pumpkin puree
  • 1/3 cup Apple juice
  • 2 Tbsp Olive oil

Directions

  1. Preheat oven to 300°F.
  2. Combine oats, coconut, almonds, BiPro, cinnamon, and nutmeg. Set aside.
  3. Mix together pumpkin puree, maple syrup, apple juice and olive oil until smooth. Pour over oat mixture and mix until oat mixture is evenly covered.
  4. Spread onto greased baking sheet.
  5. Bake 1 hour 30 minutes, stirring every 10-15 minutes to break up clumps and for even browning.
  6. Cool on pan, stirring occasionally.
  7. Store in an airtight container.

*Other nuts/seeds can be substituted if desired (pecans, walnuts, sunflower seeds)
