Peanut Butter Energy Bites

Ingredients

  • 1 Cup Quick Oats
  • 1 Cup Whey Protein Isolate, French Vanilla
  • 1 Cup Apricots, chopped
  • 1 Cup Almonds, sliced
  • 2 tsp Cinnamon
  • 1 Cup Peanut Butter
  • 1 Cup Honey
  • 1 Cup BiPro Whey Protein Isolate, French Vanilla

Directions

  1. Mix together oats, BiPro French Vanilla, apricots, almonds and cinnamon in a large bowl. Set aside.
  2. Heat peanut butter and honey in small saucepan over medium heat with stirring until smooth.
  3. Pour over oat mixture and mix until well combined.
  4. Form into 24 balls and refrigerate until firm.
  5. Balls can be left plain, dusted with cocoa powder, or rolled in coconut or chopped nuts, depending on preference.
  6. Store covered in the refrigerator.

Note: Apricots and almonds can be replaced with other dried fruit and nuts if desired. The peanut butter can also be replaced with other nut butters. This may change the nutrition profile.
