Ah, love is in the air! With Valentine’s Day so close, wouldn’t it be nice to spend a little time snuggling with your sweetie or catching up with a girlfriend over chick flicks?! How about showing the ones you love your appreciation for their friendship, companionship, and affection with a nice, homemade meal? Leave the chocolates at home (although the flowers are still okay!!) and bring your appetite! These healthy and delicious meal ideas will make the perfect gift on February 14!




Start your meal off with a salad and a bowl of this fantastic Cream of Broccoli Soup:

Preparation Time: 35 minutes
Cooking Time: 10 minutes
Serving Size: 8 servings (~1 cup each)

• 2 cups Water
• 1½ lb Broccoli, frozen, chopped (about 4½ cups)
• ¾ cup Celery, chopped
• ½ cup Onion, chopped
• ⅓ cup BiPro, natural unflavored
• 2 Tbsp Butter
• 2 Tbsp All Purpose Flour
• 2½ cups Chicken Broth
• ½ tsp Salt
• ⅛ tsp Pepper
• ⅛ tsp Nutmeg
• ⅓ cup Heavy Whipping Cream

Heat water to boiling in 3-quart saucepan. Add broccoli, celery and onion. Cover and heat to boiling. Boil until vegetables are tender (do not drain). Let cool. Place broccoli mixture in a blender, add BiPro. Cover and blend until smooth. Melt butter in 3-quart saucepan over medium heat. Stir in flour. Cook, stirring constantly, until mixture is smooth and bubbly.
Slowly stir chicken broth into flour mixture. Heat to boiling, over medium heat, stirring constantly. Boil and stir 1 minute. Stir in broccoli mixture, salt, pepper and nutmeg. Heat just to boiling. Stir in whipping cream. Heat just until hot (do not boil).

For your main course, enjoy a serving of grilled fish or baked chicken, then pucker up as you conclude your date night (or girls’ night!) with this zesty dessert recipe for Lemon Bars:

Preparation Time: 10 minutes
Bake Time: 30 minutes
Serving Size: 16 servings

Crust Ingredients
• ⅔ cup All Purpose Flour
• ¼ cup BiPro, natural unflavored
• 3 Tbsp Powdered Sugar
• ½ cup Butter, softened

Filling Ingredients
• ¾ cup Sugar
• 1 Tbsp All Purpose Flour
• ½ cup BiPro, natural unflavored
• 1½ tsp Lemon Peel
• 2 Eggs
• ¼ cup Lemon Juice
• 2 Tbsp Water

Combine ⅔ cup flour, ¼ cup BiPro and powdered sugar. Add butter and mix until a dough is formed. Press dough into an 8-inch square pan. Bake at 350°F for 15-20 minutes (edges of the crust should be light brown). Mix together sugar, 1 Tbsp flour, ½ cup BiPro and lemon peel. Add eggs, lemon juice and water. Mix well. Pour over baked crust. Bake for 15 minutes or until lemon topping has set. Sprinkle with powdered sugar when cool.
